I recently learned I can eat small amounts of flaxseed – woohoo! It’s been really nice to have a little on my hot cereal in the mornings. Then I discovered these energy balls, which are delicious snack heaven. I probably ate like six in the first day – it’s like eating cookie dough but semi-healthy?
I made two types, one for myself using Carob chips, and one for my honey with chocolate. The recipe is inspired by Trader Joe’s “No Bake Energy Bites”. Bon appetite!
ARNIE’S CAROB ENERGY BALLS
½ cup rolled oats
½ cup carob chips
½ cup ground flaxseed
½ cup cashew nut butter
¼ cup maple syrup
1 tsp vanilla extract
DAMIEN’S CHOCOLATE ENERGY BALLS
½ cup rolled oats
½ cup chocolate chips
½ cup ground flaxseed
½ cup cashew nut butter
¼ cup honey (but I might try maple next time and see if he likes it better)
1 tsp vanilla extract
METHOD
1. Mix all the ingredients in a bowl.
2. Roll into small bite size balls, about 2cms in diameter.
3. Lay them onto a baking tray and place in the freezer for an hour until set. I just put a cloth between our two layers and made sure I labeled both containers so we knew who’s was who’s!
